LATEST RECIPES FROM KATE HEMPHILL AT HERBIE’S KITCHEN
Longer evenings are just beginning, and depending on where you are, perhaps you’re eating dinner outside already. It’s also a time that we look to lighter fare (although to us curry is definitely a year-round meal); with crunchy salads, fresh seasonal veg, and grills on the menu.
Check out our Al Fresco Dining Spice Kit, which has six specially selected Herbie’s products and recipes for you to enjoy. And remember, it’s never too early to stock up on spice kits for festive gifting!
Almost all of our spice blends can be used as a dry rub, so if you’re grilling or pan-frying, try using whatever you have handy. We’ve discovered that our Korma Curry Mix is great on seared salmon.

CAJUN CHICKEN WITH RANCH SALAD
One of our first blends when Herbie’s started, Cajun Spice Mix is a perfectly balanced blend of herbiness and medium heat. For blackened Cajun chicken or fish, simply melt some butter in the pan and allow to burn before adding spices and meat.
Ranch salad is one of the most popular in the US, and it’s easy to avoid a bottled version and make your own with buttermilk and dried herbs. This is a lovely dinner combination, and also fantastic for the family served in wraps.
Other ideas for using this blend are:
- use to coat lamb chops before grilling
- stir into hommous
- add to corn fritters

PERSIAN GREENS & FETA FILO PIE
We found that turning our regular side dish of Persian Greens into a pie is absolutely delicious! A few eggs, a block of feta and some cooked lentils make this a meal in itself. Our Persian Spice Blend has a lovely exotic flavour and no chilli heat, paired with zingy Black Lime and fresh herbs, we could eat this all day.
Use the same filling to make puff pastry ‘sausage’ rolls, or make individual filo pies in a muffin tray.
Other ways to use Persian Spice Blend are:
- Dust fish fillets in spice mix, pan fry and top with freshly chopped tomato and dill and serve with rice for a quick, light dinner.
- Combine spice mix with yoghurt and marinade lamb or a whole cauliflower before roasting.

MASTER STOCK PORK WITH ASIAN SLAW
A good Chinese master stock infuses an unbeatable depth of flavour to marinate and poach meat. Our Master Stock Infusion Ball just needs to be added to boiling water, sugar and soy sauce and it can be used a number of times.
Serving this pork with a crunchy, lightly dressed slaw makes a delicious and healthy meal. If you are short on time, simply pan-fry the pork fillets in Chinese Five Spice. The pork leftovers (if there are any!) are great in rice paper rolls.

LAVENDER & LEMON OLIVE OIL CAKES
These cakes have been a part of our Spice Appreciation Class for many years.
Using culinary Lavender is commonplace in France, and a key ingredient in Herbs de Provence.
Using olive oil instead of butter, they are dense, yet still delicate, and we find this is the perfect serving size.
Serve as part of afternoon tea, or to end an al-fresco lunch or dinner.
