Add this seed mix to bread dough or dumplings. Add a little to stir-fried cabbage for a delicious crunch, or toss cauliflower florets in oil with seeds with a little tuneric and cook until lightly coloured.
STAFF-OF_LIFE BREAD
220g wholemeal bread flour
250g white bread flour
550g multigrain bread flour
50g LSA mix
30g pepitas
1 pack Herbie’s Spices Breadmaker’s Seed Mix
2 tsp dry yeast
600ml warm water
1 tsp salt
50g extra flour for dusting work surface
Dissolve salt in warm water. Mix all dry ingredients on a clean workbench, make a well in the middle. POur water into well, bringing dry ingredients in until all is mixed. Knead 10-12 mins until smooth and pliable. Place in a large bowl, cover loosely with oiled clingwrap, leave in a draught-free place until doubled in size. Knead and cut into 2 loaves. Rise for 45-60 minutes, bake in hot oven 250C for 10 minutes, then reduce to 200C and cook another 25 minutes. Cool before storing.
