Persian Greens & Feta Filo Pie

Our Persian Greens (gormeh sabzi) are full of fresh herbs and flavour from Black Lime and Persian Spices.  With a few extra ingredients, they make a wonderful filling for this pie that is great warm or cold.

  1. Pre-heat oven to 180C.
  2. Mix spices, lentils, eggs and feta into greens mixture.
  3. Brush a sheet of filo with melted butter and lay into a 20cm pie dish (a cake tin will also be fine).  Repeat with another sheet of filo, laying to cover other sides of the dish.
  4. Use a further 3 sheets of filo with edges overlapping around the dish.
  5. Place filling inside, then bring in the edges of filo to cover the pie, and brush with remaining butter.  And extra piece of filo could be crumpled on top for extra crunch, just be careful of burning.
  6. Sprinkle with nigella, sesame, or seeds of choice.
  7. Bake for 20 minutes, or until golden.
  8. Serve from baking dish, or remove carefully with 2 spatulas to a serving plate.

Notes

  • Use the same filling in veggie sausage rolls, using puff pastry
