Wuxi Ribs

These delicious ribs will disappear in seconds.  Wuxi (wooshi) ribs are a Chinese favourite – sweet, salty and spiced with Star Anise.  Simply serve with fried rice, or as part of a larger meal.

Ingredients

1kg baby back pork ribs (beef ribs can also be used with a longer cooking time), separated into individual pieces

1 tsp Herbie’s Chinese Five Spice or Ground Star Anise

2 tbsp soy sauce

60ml vegetable oil

1 tbsp freshly grated ginger

100g brown sugar

100ml water

100ml dark soy sauce

2 Herbie’s Whole Star Anise

Instructions

  1. Coat ribs in Chinese Five Spice and 2 tablespoons soy sauce (leave overnight to marinate if desired).
  2. Combine ginger, sugar, water and dark soy sauce in a large casserole and heat gently on the stovetop, and stir until sugar has dissolved.  Pre-heat oven to 120C.
  3. Heat oil in a frying pan and sear ribs for 2 minutes each side, then place in the casserole dish.  Stir to combine and top up with water to ensure ribs are just covered.  Place a lid on the casserole and cook in the low oven for 1-1 1/2 hours until meat is shrinking off the bone.
  4. Remove lid and place back on stovetop, bringing to the boil to reduce liquid.  Stir while boiling, and turn off heat when a sticky sauce is left coating the ribs generously.
  5. Serve with a sprinkle of sesame seeds and chopped chives.
