Pistachio, Cherry & Apricot Biscotti

Biscotti is a crisp Italian biscuit bound by egg whites and full of fruit, nuts and spices.  Our Fragrant Sweet Spice Blend goes perfectly with pistachios, dried cherries and apricots, but you can use any nuts of dried fruit you like.  Serve with coffee or creamy puds.

Ingredients

  • 500g plain flour
  • 400g caster sugar
  • 2 tsp baking powder
  • 1 tbsp Herbie’s Fragrant Sweet Spices
  • 100g pistachios
  • 100g blanched almonds
  • 100g dried cherries, chopped
  • 150g dried apricots, chopped
  • zest of 1 large lemon
  • 5 egg whites, lightly whisked

Instructions

  1. Pre-heat oven to 200C.  Combine flour, sugar, baking powder and spice mix in a large bowl.
  2. Stir in egg whites until a dough begins to form.  This next part gets a bit messy – start adding the nuts and fruit, then turn out onto a clean worktop.
  3. If your hands get too sticky, dampen with a little water.
  4. Work the dough into 6 sausage shapes about 3.5cm diameter.
  5. Place on 2 lined baking trays, allowing room to spread.
  6. Bake for 15 minutes until golden.  Remove and allow to cool for 10 minutes.  Reduce oven to 130C.
  7. Cut each piece into 1cm thick slices and place in a single layer on baking tray.  Cook for a further 15-20 minutes until dry and crisp.
  8. Cool completely before storing in an airtight container for up to 3 weeks.
