Tuscan Chicken

Full of the Italian flavours we all know and love, this easy chicken dish with sun-dried tomatoes, capers, spinach and our Italian Seasoning (or Bolognese Seasoning) is a sure fire winner.  Serve with crisp rosemary potatoes, creamy polenta, saffron-spiked rice, garlic mash or simply a big green salad and/or garlic bread.

Ingredients

  • 4 chicken breasts, or 8 thighs
  • 2 tbsp Herbie’s Italian Seasoning or Herbie’s Bolognese Seasoning
  • 2 tbsp olive oil
  • 2 tbsp freshly minced garlic
  • 8 sun-dried tomato halves, finely chopped
  • 3 handfuls baby spinach
  • 1 tbsp capers
  • 1 tbsp tomato paste
  • 300ml thickened cream (or thickened light cream)

Instructions

  1. Dust chicken in 1 tablespoon of Italian Seasoning.  Heat oil in an ovenproof dish to medium and fry chicken for 4 minutes each side, until golden.
  2. Add garlic and remaining tablespoon of Italian Seasoning – stir for 1 minute.
  3. Add sun-dried tomato, spinach, capers and cream – stir to combine and reduce to a low simmer.
  4. Cook for 12-15 minutes until chicken is cooked through (75C on a meat thermometer).  If using chicken thighs, cook on very low for 25-30 minutes.
  5. Season to taste and serve.

Notes

  • Replace the chicken with salmon and cook for 6 minutes.
  • For a vegetarian option, use a selection of mushrooms.
