Pomegranate & Blood Orange Salad

A delightful salad to grace the table when entertaining, the beautiful flavours are enhanced with our Crunchy Salad Sprinkle, a versatile mix of seeds and spices that can also be used as a bagel seasoning.  The sweet and sour flavours make this a lovely fresh accompaniment to roast or grilled pork.

Ingredients

100g lamb’s lettuce or other soft leaves

1 head radicchio, leaves separated

1 blood orange, segmented

40g (seeds from half) fresh pomegranate

1/2 bunch fresh dill, chopped

1 tbsp Herbie’s Crunchy Salad Sprinkle

Dressing:

2 tbsp Herbie’s Pomegranate Molasses

4 tbsp olive oil

1 tbsp blood orange juice (from segmented orange)

pinch salt

Instructions

  1. Whisk dressing ingredients together (can be kept in a jar for 2 weeks in the fridge if required).
  2. Arrange salad with green leaves first, then radicchio, orange, pomegranate and dill.  Drizzle dressing over then top with crunchy seeds.

Notes

  • Add flaked poached or smoked salmon to the salad.
  • Top with torn buffalo mozzarella.
