Mexican Summer Salad

This salad is a meal in one, or can be used as a fresh taco filling, or as a side to grilled Chipotle chicken.  We have used our Guacamole Spice Mix in the dressing with delicious results.

Ingredients

1 cos lettuce, shredded (approx 200g)

1 red capsicum, diced

1 mango, diced

150g (1 cup) black beans, drained

80g corn kernals

2 large avocados, diced

1/2 red onion, very finely sliced

100g queso fresco or feta, sliced or crumbled

1 bunch coriander, chopped

2 tbsp pumpkin seeds

lime wedges and corn chips, to serve

Dressing:

200ml light creme fraiche

4 tbsp lime juice

1 tbsp Herbie’s Guacamole Spice Mix

Instructions

  1. Mix dressing ingredients together.  Add a little water if needed to loosen the consistency.
  2. Combine half the dressing with lettuce and place lettuce in one large serving bowl, or in individual bowls.
  3. Top lettuce with capsicum, black beans, corn, mango, avocado, onion and cheese. Drizzle over remaining dressing and top with coriander and pumpkin seeds.
  4. Serve with corn chips and lime wedges.

Notes

  • Recipes makes 1 large salad for 6-8 people or 4 salad bowls for a meal.
