Za’atar Feta & Lamb Pizza

You may be familiar with the wonderful Turkish pizza style dish called Lahmucin.  This is our version using Herbie’s kofta and falafel spice blend for the lamb, and marinating feta with za’atar for the topping.  The marinated feta is also great added to salads and sandwiches. For a vegetarian option, simply make up our falafel recipe and press the mixture onto the bread base instead of the lamb, drizzling over a little extra olive oil before baking.

Ingredients

Feta

  • 200g block quality feta, crumbed
  • 125ml (1//2 cup) olive oil
  • 1 tbsp lemon juice
  • 2 tbsp Herbie’s Za’atar

Pizza

  • 6 white or wholemeal khobez/flatbreads/Lebanese bread
  • 500g lean lamb mince
  • 1 tsp Herbie’s Kofta Spice Blend
  • 1 tsp salt
  • 2 tbsp tomato paste
  • 2 tbsp pine nuts
  • 1/4 cup mint leaves
  • 1/2 cup parsley

Instructions

  1. Mix feta ingredients and set aside, or store in a jar in the fridge for up to one week.
  2. Preheat oven to 190C.
  3. Place all pizza ingredients (except bread) in a food processor and blitz until combined to a rough paste.
  4. Using a spatula, spread equal amounts of topping onto bread, pressing firmly.
  5. Bake for 15 minutes or until bread is crisp and lamb is browned.
  6. Serve topped with za’atar feta and extra parsley and pine nuts, if desired.

Notes

These are also delicious at room temperature if taking to a picnic.
