Winter Wellness Salad

This nourishing bowl is full of flavour and added goodness from our Spice Tonic Blend, which we normally have with hot water and lemon, or fruit juice in the morning.  However this mix of turmeric, beetroot, paprika, cinnamon, ginger, cloves and more can also be used in any savoury recipe too.  We love how it pairs with the delicious and nutritious ingredients in this salad.

Ingredients

  • 1 large or 2 small chicken breasts (approx 300g)
  • 150g raw kale, chopped into roughly 1 inch pieces with any thick/hard vein removed
  • 200g carrots, peeled and cut into chunks, par boiled until just tender
  • 2 tsp Herbie’s Spice Tonic Blend
  • 1 tbsp olive oil
  • 100g red quinoa, cooked and thoroughly drained
  • 1/4 cup pomegranate seeds

Nuts:

Dressing:

  • 45 ml apple cider vinegar
  • 40 ml quality extra virgin olive oil
  • 1 tsp runny honey
  • 1 tsp freshly grated ginger
  • 1/2 tsp Herbie’s Spice Tonic Blend
  • 1/2 tsp sea salt (or to taste)

Instructions

  1. Coat the chicken breast(s) and par-boiled carrots with spice blend.
  2. Heat oil in a frying pan and pan-fry on all sides until golden, and chicken cooked through (if the chicken breast is very thick, slice in half vertically to cook).
  3. For nuts, add all ingredients to a dry pan and toast for 2-3 minute until pumpkin seeds start to pop. Remove from pan immediately.
  4. For dressing, combine ingredients in a jar and shake, or whisk in a bowl. Massage half the dressing into the kale leaves and place in a bowl. Add quinoa, nuts, carrots and sliced chicken and top with remaining dressing.
