Texan Pork Ribs

These delicious ribs will disappear in no time. Easy to prepare a day ahead by slow roasting, then finish off on the barbecue the next day. We like to serve this with a black lime, bean and corn salad or coleslaw.

Ingredients

  • 1.2kg American style pork ribs
  • 1 tbsp Herbie’s Rib Spice
  • 125ml ketchup
  • 60ml (4 tbsp) cider vinegar
  • 60ml (4 tbsp) apple juice
  • 2 cloves garlic, crushed
  • 1 tsp salt
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar
  • 2 tbsp maple syrup

Instructions

  1. Combine all marinade ingredients in a small saucepan, and heat over a low heat until sugar has dissolved. Cover ribs in mixture in a plastic bag and marinade for 2-24 hours.
  2. Heat oven to 150C and place ribs on a baking tray, lightly covered with foil, and cook for 2 hours until meat is very tender (turn ribs once during cooking).
  3. To serve, either cook on a hot barbecue for 5 minutes each side, or turn the oven up to 220C and bake for 10 minutes.
