Spiced Honey Cake

Serves: 8 slices

This honey-rich cake is perfect with our mixed spice and a touch of cardamom – the kitchen is guaranteed to smell amazing! Serve warm with thick cream or yoghurt for a divine Autumnal dessert.

  • 150g butter, softened
  • 150g (3/4 cup) brown sugar
  • 70ml (1/4 cup) honey
  • 2 eggs
  • zest of 2 oranges (approx 3tbsp zest)
  • 250g self raising flour
  • ½ tsp Herbie’s Mixed Spice
  • ½ tsp Herbie’s Ground Cardamom
  • 185ml (3/4 cup) milk
  • 1 large pear, peeled and sliced, to decorate (optional)

  1. Preheat oven to 180C.
  2. Line and grease a 20cm springform pan.
  3. Beat butter, sugar and honey until creamy, then add eggs one at a time, beating well. Stir in orange zest and milk.
  4. Fold flour and spices into batter until smooth, then pour into prepared tin. If using pear, arrange on top, pressing gently into cake.
  5. Bake for 35-40m until a skewer inserted comes out clean.
  6. Stand for 10 minutes before removing from tin, and serve warm or at room temperature.
