Smoked Chicken Salad with Mango Curry Dressing

Our signature curry blend is put to lighter use in this delicious salad. The dressing can also be used as a dip for crudité or skewers of barbecued meat.


Use leftover salad in a crusty baguette
Replace the smoked chicken with fresh prawns
When in season, add a peeled, sliced fresh mango to the salad


  1. For dressing, blitz all ingredients together and taste for seasoning. Set aside.
  2. Using a mandolin or sharp knife, slice the radishes and carrot into very thin discs. Toss them together with the spinach leaves. Roughly chop macadamia nuts.
  3. Cut smoked chicken into 1cm slices.
  4. Top salad with nuts, sesame seeds and chicken and drizzle dressing over the top.
