Herby Falafel

Falafel are easy to make and perfect for snack, wraps, mezze and salads.  The key is to use soaked, dried chickpeas (not canned or cooked) for a perfect texture and taste.  Our new falafel and kofta blend means you can whip these up in no time.

Ingredients

  • 300g (1 1/2 cups) dried uncooked chickpeas
  • 1 red onion, roughly chopped
  • 2 cloves garlic
  • 3 teaspoons salt
  • 1 tbsp Herbie’s Kofta & Falafel Spice Blend
  • Juice of 1 lemon
  • 60g (1 packed cup) each fresh parsley and coriander
  • rice bran or vegetable oil, for frying

Instructions

  1. Soak chickpeas in a large bowl of water overnight, drain.
  2. Blitz all ingredients, then make into patties 5cm diameter, 3-4cm thick.
  3. Heat vegetable oil to 2cm deep in frying pan
  4. When small bubbles appear, cook falafel 3-4 mins each side until golden.
  5. Drain on paper towel & keep warm in oven if necessary.
