Crackin’ Cauli Popcorn

We recently discovered Gunpowder Spice on our travels to South India, and love having an extra condiment to add optional heat to a meal. We have used this fantastic spice to make a coating for cauliflower ‘popcorn’ – a delicious and healthy nibble or side dish.

Ingredients

  • 1 head of cauliflower, small florets cut off (keep trimmings to make cauliflower rice)
  • 125ml (1/2 cup) Greek yoghurt
  • 2 tsp Gunpowder Spice
  • curry leaves, coriander, pomegranate and pine nuts, to serve (optional)

Instructions

  1. Heat oven to 200C.
  2. Combine yoghurt and spice blend in a large bowl, then add cauliflower, coating thoroughly.
  3. Place on a lined baking tray and roast for 25-30 minutes until golden.
  4. Serve with desired garnishes and eat while hot.
