- Boil carrots until tender. Pulse in a food processor with olive oil, cumin, honey, lemon juice and salt (alternatively simply mash with a fork). Taste for seasoning then serve topped with feta.
- For flatbread, pre-heat oven to 180C. Brush or rub oil over the pita pieces and sprinkle evenly with za’atar. Place on a baking tray and bake for 5-10 minutes until crisp. Once cooled, they can be stored in an airtight container.
