Mustard - Make your own

Just follow the recipes on the back of the pack to make your own wholegrain mustard. You can experiment with different liquids such as vinegar, wine and verjuice to make it hot or mild and even try adding interesting additions such as sun-dried tomatoes. Each 100g pack makes enough mustard to fill a 270mL jar. [Top]

Ockkah

Dip bread into olive oil and then dip it into the Ockkah for a tasty snack. Ockkah is delicious sprinkled over salads or mixed with mayonnaise for dipping crudites. Ockkah makes a tasty coating when put on chicken, tuna or salmon before grilling or pan-frying. [Top]

Salt & Pepper Squid Spice

Sprinkle 2 teaspoons of spice blend per 500g of seafood into a dry, hot pan and lightly roast. Coat seafood with roasted spice mix and stir-fry. [Top]

Nasi Goreng Spice Mix

Mix one measure of Nasi Goreng Spice Mix with an equal quantity of water. Add half a measure of oil and stir until blended. Keep refrigerated or use at once. [Top]

Zedoary

The dried rhizome of a ginger-like plant. Used in Asian curries in the same way as kentjur and galangal. In India it is called "shoti" where it is sometimes used as a thickener instead or arrowroot. [Top]

Lemon & Herb Pepper

What's new at Herbie's? We have a new Lemon and Herb Pepper, which is like none you've tasted before. Any lemon pepper you've bought in the supermarket will contain citric acid to give the lemon tang, but we have found some fantastic natural dried lemon and lime powders which are made in Australia. We just had to use them in this way, and we know you'll love this new product as much as we do. It carries a recipe for Corn-fed Chicken with Lemon Couscous … fabulous! [Top]

Greek Seasoning

Also new is our Greek Seasoning, perfect for summer barbecues with the Mediterranean influence of grilled eggplant, capsicum and zucchini. This is a family-friendly blend that the kids will enjoy, with flavours of rosemary, oregano, garlic, sumac and lemon predominating. Rasam Powder

Some of our Indophile customers have lamented the lack of a Rasam Powder in Herbie's range. Well, they need lament no longer, as we've created one for them. Rasam is a thin, spicy soup much loved in Southern India, and the colonial English gave it the name of Pepper Water. Serve it as a soup in the traditional western way, or use the more authentic Indian way and serve it as part of the main spread. It can be spooned over rice, or sipped separately. [Top]

Sambal Olek

From Greece via India to Asia - in response to requests, we now have a Sambal Olek spice mix. Made with the freeze-dried red chillies that work so well in the Harissa mix, this new concoction mixes with water and oil to produce an authentic-tasting Asian chilli paste. [Top]

August 2000 - NEW Berbere spice mix

Use this coarsely ground African spice blend as a coating on meat before cooking or make into an easy casserole with the following recipe.Herbie's Berbere Spice Mix is available to order on-line, or you may make your own by blending the following spices.

To make the Berbere spice mix, place in a pestle & mortar and coarsley
crush:
1 tsp Sea Salt
2 tsp Cumin Seeds
2 tsp Coriander Seed
1/2 tsp Black Peppercorns
1/2 tsp Ajowan Seed
1/4 tsp each of Fenugreek Seed, Allspice Berries, Chilli Flakes & Cloves.

Try this great recipe

BERBERE CHICKEN
500g chicken thigh filets, boned and trimmed
2 Tablespoons Berbere
1 Tablespoon cooking oil
1 onion finely chopped
1 clove garlic, crushed
2 carrots halved lengthwise and cut into 2cm pieces & additional vegetables if desired.
1 Tablespoon tomato paste
Water
Roll the pieces of chicken in Berbere. Heat oil in casserole dish, fry onions until clear and add garlic. Add coated chicken, brown then add tomato paste, carrots (additional vegetables) and add enough water to cover. Transfer to the oven at 150° for half an hour or until the chicken and vegetables are cooked. Serve with a sweet potato mash, rice, or any other carbohydrate to soak up the gravy.


May 2000

 The Jaguar Awards for Excellence Each year Jaguar and Gourmet Traveller magazine announce a series of awards to businesses and individuals who have demonstrated excellence in the food and travel industries. We were thrilled at Herbie's when it was announced that we had been awarded one of the Jaguar awards for excellence in association with Australian Gourmet Traveller for 2000. The award was for 'Innovation in Produce' and recognised our commitment to excellence in providing the most comprehensive range of top quality culinary herbs and spices in Australia. Our trophy (the classic Jaguar emblem) sits in pride of place on the counter at Herbie's Spices shop in Rozelle.

 Batavia On the activities front, Herbie is conducting a number of spice appreciation workshops with a difference, they are held on the magnificent reconstruction of the Batavia at the Australian Maritime Museum at Darling Harbour. The original Batavia was constructed by The Dutch East India Company to carry spices from the Spice Islands of Indonesia to Europe.

For a fascinating insight into what life at sea must have been like for these daring spice merchants and to learn interesting facts and useful suggestions on how to use the spices of the Indonesian archipelago, contact the Australian National Maritime museum. Details are as follows:
