Description & Use
These powdered, dried mushrooms have a unique, earty-sweet flavour, and distinct meatyness which compliments sauces, casseroles and rice dishes. When infused in hot water, the liquid makes an ideal meat stock replacement for vegetarians. Chefs sometimes refer to crushed or ground porcini mushrooms as “kitchen tobacco”.
