Vegetarian Sambar

4 as a meal, 8 as a soup

2 tablespoons mustard oil

2 tablespoons Herbie’s Spices Sambar Powder

2 cups vegetables, chopped into 1cm pieces (either a mixture or all one kind)

2 cups water

½ teaspoon salt

1 cup lentils or yellow split peas, soaked and cooked in 4 cups water until very soft

1 tablespoon chopped coriander leaves

2 cups cooked rice, to serve

Methods/steps
  1. Heat the oil in a large saucepan and stir in the Sambar powder.
  2. After one minute, add the vegetables and stir-fry for a further two minutes. 
  3. Pour in the water and salt, cover and simmer until vegetables are cooked. 
  4. Add the mushy lentils or peas, and simmer another five minutes. 
  5. Garnish with fresh chopped coriander leaves and serve hot over rice.
Additional Tips
This is a comfort food par excellence and makes the very best winter lunch or Sunday dinner.  Leftovers (if there are any!) can be reheated or frozen.

When two or three vegetables are used (eg onion, eggplant, potato, okra) there is a subtle blending of flavours.  For a more distinctive flavour, make the sambar with only one type of vegetable.
