The Captain's Yellow Curry
Description

With chicken & red lentils, this mild curry is perfect for children and curry beginners.

2 tablespoons Herbie’s Spices Yellow Curry
1 tablespoon natural yoghurt
8 drumsticks or 8 mixed chicken pieces
2 onions sliced
2 tablespoons oil or ghee
1 clove garlic, crushed
3 tablespoons red lentils, rinsed
1 red chilli, sliced, seeds removed

Methods/steps
  1. Mix the curry mix with yoghurt. 
  2. Rinse chicken and pat dry, then marinate in curry/yoghurt mix for 30 minutes. 
  3. Gently fry one sliced onion in oil until well browned and caramelised.  Set aside.
  4. In same pan, heat remaining oil and brown chicken well. 
  5. Add remaining onion and garlic, cook for 2 minutes, then add lentils, chilli and 1 cup water. 
  6. Simmer about 40 minutes until chicken is cooked and lentils are soft. 
  7. Remove lid and reduce a little before serving.
Additional Tips
Curries come in many flavour profiles and heat levels.  This one, being very mild, is great for families.
