Staff-of-Life Bread
Description
We've been making our own bread for years - it's a pleasant weekend chore and so rewarding! It's good to know exactly what goes into your bread.

2 loaves
4 teaspoons active dry yeast
600 g multigrain bread-making flour
250 g white bread-making flour
250 g wholemeal bread-making flour
30 g pepitas
50 g LSA mix (linseed, sunflower and almond meal)
30 g soy flour
1 pack Herbie's Spices Bread-Maker's Seed Mix
600 ml warm (blood-temperature) water
2 teaspoons salt
Methods/steps
Stir salt into warm water until dissolved. Combine all dry ingredients and slowly add water. Knead dough until smooth and elastic - about 10-12 minutes, or 6 minutes using the dough hook of your Kitchen Aid (make two batches of half mixture if using the Kitchen Aid). Lightly oil a bowl, place dough in it, and cover with a damp cloth. Put in a warm, draught-free place until risen to twice its original size (about 2 hours), then punch down and cut into two equal pieces. Form into loaves and place in oiled tins or on trays. Leave to rise until almost twice the size, then bake at 250 degrees C for 35 minutes. Turn out onto a cooling tray.
Additional Tips
Flour can change from one batch to the next, so don't be alarmed if you need more water or more flour to make your dough feel right.
