Spiced Pork Fillet with Preserved Lemon Salsa
Description Balmain and Rozelle Spice Mix is a natural with white meats, and is the perfect seasoning for this pork fillet.  The lemon myrtle and Kaffir lime leaf in the spice blend partner well with the preserved lemon salsa.

2 large pork fillets
4 tablespoons Herbie’s Spices Balmain and Rozelle Spice
mashed potatoes, to serve

Salsa: 

1 red capsicum, diced
1 preserved lemon wedge, diced
½ avocado, diced
2 tablespoons olive oil
1 tablespoon verjuice
1 tablespoon lime juice
½ cup fresh coriander leaves
¼ red chilli, chopped and seeded

Methods/steps
  1. Trim pork of any fat and sinew and coat in Balmain and Rozelle Spice. 
  2. Boil potatoes.
  3. Mix salsa ingredients together and chill.
  4. Heat griddle pan or barbecue until hot and grill pork for 7 minutes each side. 
  5. While pork is cooking, mash potatoes with butter and cream.
  6. Slice pork on the diagonal and serve on top of mash with a spoonful of salsa on top.
Additional Tips
This is a perfect summer dinner, with the lemony flavours and sunny colours.
