Herbies Spices Recipes
2 large pork fillets
4 tablespoons Herbie’s Spices Balmain and Rozelle Spice
mashed potatoes, to serve
1 red capsicum, diced
1 preserved lemon wedge, diced
½ avocado, diced
2 tablespoons olive oil
1 tablespoon verjuice
1 tablespoon lime juice
½ cup fresh coriander leaves
¼ red chilli, chopped and seeded
Trim pork of any fat and sinew and coat in Balmain and Rozelle Spice.
Mix salsa ingredients together and chill.
Heat griddle pan or barbecue until hot and grill pork for 7 minutes each side.
While pork is cooking, mash potatoes with butter and cream.
Slice pork on the diagonal and serve on top of mash with a spoonful of salsa on top.
