Spiced Figs
Description
Perfect fresh figs do not need much embellishment. A gentle dusting of ground cardamom seed adds a touch of exotica without overpowering the unique fig flavour.

4 fresh figs
4 level teaspoons soft brown sugar
1 teaspoon Herbie’s Spices Cardamom Seed Green Ground
mascarpone to serve
Methods/steps

Halve the figs.

Mix the sugar and ground cardamom seed together in a small bowl, then sprinkle evenly over the cut side of each fig half.

Grill the figs under moderate to high heat until the sugar has melted and the figs have warmed through and softened.

Serve with mascarpone.
Additional Tips
Alternative cooking method: Melt sugar and cardamom in a pan then place figs cut side down in the pan and cook over medium heat until browned. Remove figs when cooked and add a little cream to the pan. Swirl to mix pan juices with cream, and pour over the plated figs.
