Satay Sauce
Description The satay man, with his portable coal fire and his palm-leaf fan, is ubiquitous in Singapore and Malaysia.  Skewers of lamb, chicken, prawn or beef with a satay dipping sauce are an essential part of any occasion.

approx 2 cups

3 tablespoons Herbie’s Spices Satay Spice Blend

½ tablespoon peanut oil

½ tablespoon Herbie’s Spices Gula Melaka or soft brown sugar (more to taste if desired)

6 tablespoons peanut butter

½ cup water (approx)

Methods/steps
  1. Heat a saucepan and dry roast the spice powder for about 1 minute – do not overcook. 
  2. Add oil, gula melaka and peanut butter, stirring constantly. 
  3. Slowly add water, still stirring, until desired consistency is achieved. 
Additional Tips
Serve with skewers of chicken, lamb, pork, beef or seafood.  This sauce has a sweet, fresh taste and is free of the tang of food acid found in most pre-pared sauces.
