Quick Tomato Kasundi
Description

Kasundi is an Indian condiment, but don't feel that you have to restrict the use to purely Indian menus.  Spread some kasundi your roast beef sandwich, or use as a condiment with grilled meats.

approx 300 ml

1 tablespoon vegetable oil

2 teaspoons Herbie’s Spices South Indian Seafood Masala

1 cup chopped tinned tomatoes

2 teaspoons brown sugar

1 teaspoon salt or to taste

pinch Herbie’s Spices Chilli Kashmiri Ground (optional)

Methods/steps
  1. Heat oil in medium saucepan and add half  spice mix (1 teaspoon).
  2. Fry gently for one minute, being careful not to burn spices.
  3. Add tomatoes, sugar and salt, and heat until bubbling. Lower heat.
  4. Add remaining 1 teaspoon of spice mix and chilli powder, and stir, mashing with a wooden spoon until liquid is reduced and tomato pieces become pulpy.
  5. Add a squeeze of lemon if desired.

 

Additional Tips
Use as an accompaniment to dhals, lamb cutlets and kebabs or pan fried fish.
