Pain d'Epices (Gingerbread)

Ingredients

1½ cups SR flour
¾ tablespoon Herbie’s Spices Ginger Ground
½ teaspoon
Herbie’s Spices Quatre Epices (sweet)

½ cup raw sugar
100g butter
100g treacle
175g golden syrup
1 egg white
150mL milk

Methods/steps
  1. Preheat oven to 180ºC (170ºC fan-forced) and grease a loaf tin. 
  2. Sift the flour and spices into a large bowl.
  3. Melt sugar, butter, treacle and golden syrup until sugar is dissolved. 
  4. Beat egg white with milk for 1 minute, then combine all ingredients to make a smooth batter.
  5. Pour into the prepared tin and bake for 45 minutes or until cooked. 
  6. Cool on a rack.
Additional Tips
Keep in an airtight container once completely cooled.
