Herbies Spices Recipes
6 eggs, separated
330g caster sugar
zest of 2 oranges
200g almond meal
75g sifted plain flour
3 teaspoons Herbie’s Spices Fragrant Sweet Spices
½ cup orange juice
Preheat oven to 170ºC.
Grease a 23cm spring-form pan and dust with flour.
In an electric mixer, cream egg yolks and sugar. Add orange zest, then fold in almond meal, flour and spice. Gently stir in orange juice.
Beat egg whites until soft peaks form and fold into mixture until thoroughly blended.
Pour into the prepared cake tin and bake for 70 minutes.
Cool and serve.
