Onions with Feta and Spices
Description A spread of mezze dishes is a wonderful way to entertain at lunch time.  Easy to prepare in advance, the dishes (such as this one) are tasty and very more-ish.

6 red onions, peeled and sliced

1 tbsp olive oil

Salt to taste

1 tsp Alleppey turmeric

1 tsp smoked paprika

2 tsp ground cumin

½ tsp chilli flakes

300 g feta, crumbled

2 tbsp flat leaf parsley, chopped

Harissa, flatbread and yoghurt, to serve

Methods/steps

In a large pan, cook the onions, spices and salt in the oil over low heat for 30 minutes.  They should be very soft.  Add the feta and cook a further 5 minutes, stirring.  Serve warm or at room temperature with flat bread, harissa and plain yoghurt.

Additional Tips
The key to success with this is patience - make sure you allow the onions to cook long and slow to achieve absolute softness.
