Old Fashioned Lamb Stew
Description As much as we enjoy exploring the food methods and flavours of exciting countries from other parts of the world, there is sometimes nothing like the old-fashioned comfort food of our European heritage.  This lamb stew, redolent with bouquet garni, will take you right back to your grandmother's kitchen ... although some grandmothers would not have used garlic!

1 Kg lean lamb cubes

1 garge onion

2 cloves garlic

1 tablespoon rice bran oil or dripping

2 tablespoons plain flour

2 teaspoons Sweet Paprika

1 teaspoon salt, or more to taste

1 tablespoon Bouquet Garni, or 1 Bouquet Garni ball


  1. Chop onion and garlic.  Place paprika, flour and meat in a clean plastic bag, twist top closed, and shake to coat meat with seasoned flour.
  2. Heat oil in a heavy-based pot and saute onion and garlic over medium heat until soft but not browned.
  3. Increase heat, add meat, and turn pieces so that all sides are sealed.
  4. Add 1 cup water and the Bouquet Garni, stirring to combine.
  5. Reduce heat to low, cover pot and simmer for 1 hour or until meat is tender.
  6. Serve over fluffy mashed potatoes.
Additional Tips
If you have left-over gravy, add it to a vegetable soup for extra richness.  If there is a little stew left over, halve a bread roll and pull some of the soft middle bread out.  Fill the cavity with stew, close the lid, and heat in the microwave for a warming lunch or snack.
