Wash the carrots and chop into chunks.
Cook in boiling salted water until tender.
Drain, then combine carrots with oil, cumin, honey, lemon and chilli in a food processor, and process until fairly smooth.
Taste, and adjust to your personal taste by adding more lemon, honey, chilli or salt.
Serve with crackers or flatbread.
Other ideas for cumin:
· Mix 1 or 2 teaspoons with a good quality bought hummus for a “home-made” flavour
· Add to pumpkin soup for added depth and interest
