Moroccan Carrot Dip
Description Preparing a table of mezze dishes is a very easy and attractive way to entertain in a casual way.  Combine this carrot dip with Zahlouk, Slow Roasted Roma Tomatoes, a good hummus and baba ganoush and some Za'atar bread for a delicious vegetarian lunch.

Makes
approx 2 cups

2 large carrots

2 tablespoons olive oil

2 teaspoons Herbie’s Spices Cumin Seed Ground

2 tespoons honey (more or less to taste)

juice of 1 lemon

½ teaspoon Herbie’s Spices Chilli Powder Medium or Harissa Mix Special Blend, to taste

flat bread, to serve

Methods/steps
  1. Wash the carrots and chop into chunks. 
  2. Cook in boiling salted water until tender. 
  3. Drain, then combine carrots with oil, cumin, honey, lemon and chilli in a food processor, and process until fairly smooth. 
  4. Taste, and adjust to your personal taste by adding more lemon, honey, chilli or salt.
  5. Serve with crackers or flatbread.

 

Additional Tips

Other ideas for cumin:

 

·         Mix 1 or 2 teaspoons with a good quality bought hummus for a “home-made” flavour

·         Add to pumpkin soup for added depth and interest
