Miss Alice's Shortbread

200g butter
1 cup sugar
3 cups self-raising flour
3 teaspoons Herbie’s Spices Mixed Spice
2 teaspoons
Herbie’s Spices Poppy Seeds Blue Whole

2 teaspoons
Herbie’s Spices Toasted Sesame Seeds

Methods/steps
  1. Pre-heat the oven to 180ºC. 
  2. Melt the butter in a saucepan or in a microwave-safe dish in the microwave. 
  3. When it is melted, add the sugar and the sifted flour and spices.  Stir well until everything is blended together. 
  4. Grease a lamington cake tin, and press the shortbread mixture into the tin, pushing well into the corners. 
  5. Make sure it is nice and flat on the top, and sprinkle half with poppy seeds and half with toasted sesame seeds, then pat down lightly. 
  6. Bake in the oven for about 30 minutes. 
  7. When the shortbread is golden and lightly risen, take it out of the oven using oven mitts, and cut the slice into squares or fingers while still warm. 
  8. Cool in the tin, then store in an airtight container.
