Mexican Corn
Description If you're really pushed for time, you could do this using frozen pieces of corn on the cob.  But for a better quality result, we think it's worth using fresh corn.

8 as part of a meal

4 fresh cobs of corn, halved

1 tablespoon butter, melted

2 limes, quartered    

1 tablespoon Herbie’s Spices Mexican Spice Blend

2-3 tablespoons freshly grated Parmesan or Grana Padano

Methods/steps
  1. Brush corn with melted butter. 
  2. Grill, turning, until cooked and coloured.
  3. Sprinkle Mexican Spice Blend over the cobs as they cook, and squeeze lime juice over.
  4. Roll in grated parmesan and serve hot.
Additional Tips
There is some sort of primal pleasure in devouring corn on the cob, with buttery juice dripping.  This recipe acknowledges the New World origins of corn, and is bound to be a winner with your family and friends at your next barbecue.
