Hot Chocolate Mexican Style
Description Since the movies Like Water for Chocolate and Chocolat, people have been fascinated by the Mexican version of our homely cup of cocoa.  As the movie title suggests, hot chocolate can be made using hot water or hot milk, or a combination of the two.  This is our version.

1 cup milk

1 cup water

4 wedges Herbie's Spices Mexican chocolate

1 cinnamon quill

1 teaspoon cornflour

a pinch of medium chilli powder, to taste

Methods/steps

1. Combine water, milk, chocolate, cinnamon, chilli and cornflour in a small saucepan.

2.  Heat until almost boiling, stirring constantly while chocolate melts.  The liquid needs to be very hot in order to thicken the cornflour, and stirred constantly so that it doesn't make lumps.

3.  Holding a whisk between the palms of your hands, rub hands backwards and forwards briskly to make a well-blended and frothy drink.

4.  Serve immediately into two cups whilst still frothy.

Additional Tips

This delicious and warming drink can be tailored to your own preference as to the balance of water and milk.
