Harissa Sauce
Description
Harissa is a fiery Moroccan concoction of chillies, garlic, caraway seeds and other spices. When made into a paste, it is served on the side of the plate in much the same way that mustard is served in England. When made into a sauce like in this recipe, it can be poured like a gravy over couscous or meats.

approx 200 ml
1½ teaspoons Herbie’s Spices Harissa Mix Special Blend
1 tablespoon olive oil
1 tablespoon tomato paste
1 tablespoon lemon juice
½ cup chicken or lamb stock
1 tablespoon each chopped parsley & coriander
Methods/steps

Put the Harissa Mix in a small jug and add just enough hot water to cover.

Leave for ten minutes to soften, then stir in the olive oil. (At this stage it can be transferred to a screw-top jar and kept refrigerated for a week – use with sandwiches!)

Add the tomato paste, lemon juice, and chopped herbs, and serve warm with couscous or meat.
Additional Tips
If you have sauce left over, it can be added to any home-made or bought soup for a delicious bite and flavour.
