Herbies Spices Recipes
A variation based on Diana Kennedy’s recipe in My Mexico (Potter, 1998)
4 teaspoons Herbie’s Spices Guacamole Spice Mix
2 cups roughly mashed avocado pulp
½ cup peeled and finely diced peeled, ripe, firm, peaches
½ cup halved seedless green grapes
1½ tablespoon fresh lime juice
1/3 cup fresh pomegranate seeds, if available
Mix the Guacamole Spice Mix into the mashed avocado, then gently stir in the rest of the ingredients, reserving half the pomegranate seeds.
Sprinkle the remaining pomegranate seeds over the top and serve at room temperature.
