Green Curry With Fish
Description
Green curry has never been so easy. You can add other green vegetables such as snow peas, shallots and small florets of broccoli if you wish to make a more complete meal.

1 tablespoon sesame or peanut oil
4 teaspoons Herbie’s Spices Green Curry spice mix
1 green capsicum, sliced into thin strips
½ teaspoon fish sauce
1 cup coconut milk
500g boneless fish fillets or steaks
fresh basil or coriander leaves

Methods/steps
- Heat the oil in a wok.
- Add the spice mix and sliced capsicum strips.
- Add the fish sauce and coconut milk.
- Bring to the boil, stirring constantly.
- Reduce the heat and add fish.
- Simmer until the fish is cooked – 10-15 minutes, depending on the type of fish.
- Stir in the chopped fresh herbs just before serving.
Additional Tips
Serve this over steamed white rice for an authentic Thai-style green curry. If you don't want to use fish, substitute chicken for an equally good effect.
