Gingerbread
Description Gingerbread is very different to the mixture used to make gingerbread men.  This is a delicious, dark cake that compliments a cup of tea to perfection.  Otherwise, serve it straight from the oven with a dollop of clotted cream.

1½ cups SR flour
¾ tablespoon Herbie’s Spices Ginger Ground
½ cup raw sugar
100g butter
100g treacle
175g golden syrup
1 egg white
150mL milk

Methods/steps
  1. Preheat oven to 180ºC (170 fan-forced) and butter a loaf tin or flat tin approximately 20cm x 30cm. 
  2. Sift the flour and spices into a large bowl.
  3. Melt sugar, butter, treacle and golden syrup until sugar is dissolved. 
  4. Beat egg white with milk for 1 minute, then combine all ingredients to make a smooth batter.
  5. Pour into the prepared tin. 
  6. Bake for 45 minutes or until cooked. 
  7. Cool on a rack. 
Additional Tips

Keep airtight once completely cooled.
This cake freezes well.
