Farmer's Potato Bake
Description This delicious and easy recipe was given to us by our friend Maureen Simpson, and published in her book, Comfort Food.  It's a great accompaniment to roast chicken or beef.

1kg Desiree potatoes                                   

2 tablespoons olive oil

2 medium onions, cut lengthwise into eights

2 tablespoons balsamic vinegar

1 teaspoon Herbie’s Spices Thyme Leaves Rubbed                         

salt to taste

freshly ground black pepper to taste

Herbie's Spices Paprika Smoked - Sweet, to garnish

Methods/steps
  1. Preheat the oven to 220ºC. 
  2. Wash the potatoes and cut into 3cm chunks. 
  3. Put the oil into a large, shallow baking dish. Add the potatoes and onions, then cover tightly with foil. 
  4. Bake in the oven for about 45 minutes.
  5. Remove the dish from the oven, take off the foil and sprinkle the balsamic vinegar evenly over the potatoes. Scatter with thyme. Season with salt and plenty of  pepper.
  6. Increase the oven temperature to very hot and cook uncovered for a further 30-40 minutes, or until the potatoes are tender and slightly crisp and golden on the edges. 
  7. Sprinkle with the smoked paprika before serving.
