Easy Burritos
Description This is an easy family meal all wrapped up in a tortilla.  Simple and quick to prepare, and guaranteed to get your kids eating their veges and greens as they build their own tasty burrito.

1 onion
¼ each green, red and yellow capsicum
1 tablespoon cooking oil
500g lean beef strips
1 tablespoon Herbie’s Spices Mexican Spice Blend
burritos or tortillas
chopped tomatoes
shredded lettuce

 

 

Methods/steps
  1. Slice onion and capsicums into even strips. 
  2. Heat oil in a heavy-based pan and fry onions and capsicums over moderate heat until onions are transparent.
  3. Increase heat, add beef and seasoning and brown beef well.  Add a tablespoon of water if desired. 
  4. Wrap in warmed burrito or tortillas with fresh chopped tomato and shredded lettuce.
Additional Tips
If you have left-overs, they are great for the lunchbox, either hot or cold.
