Daisy's Apple Tea Cake
Description Here's a cake that is simple enough for the kids to make.  To make an extra crunchy topping, mix a tablespoon of melted butter and 2 teaspoons each of caster sugar and mixed spice, and brush over the top of the cake just as it finishes cooking.  Return to the oven for another 5 minutes.

1 cup self-raising flour
½ cup caster sugar
1 teaspoon butter
1 egg, beaten
¼ cup milk
1 Granny Smith apple, peeled, cored and finely sliced
2 teaspoons Herbie’s Spices Mixed Spice

Methods/steps
  1. Grease a cake tin approx 20cm diameter, and heat oven to moderate. 
  2. Sift flour and sugar into mixing bowl, rub in butter, then add egg and milk to make a fairly soft mixture.  (Add a little more milk if necessary.) 
  3. Pour into tin, arrange apple on top of the mixture, or use same quantity of canned apple and berry mixture. 
  4. Mix the mixed spice with an extra teaspoon of sugar and sprinkle liberally over fruit. 
  5. Bake for 30 minutes, until cake has risen and top is browned. 
Additional Tips
Best served fresh from the oven.
