Crispy Kumera
Description
Tiger's Spice was originally developed for Tiger's Leagues Club in Sydney, to be used in their kitchens. The gold-and-black tiger theme was followed as closely as possible, with black sesame seeds and nigella seeds providing the black "stripes" through paprika and other spices. Hints of lime and lemon give a lovely lift to the flavours.

6-8 as part of a meal
3 medium sized kumara or sweet potatoes, peeled
2 tablespoons Herbie’s Spices Tigers Spice
4 tablespoons olive oil
Methods/steps

Cut kumara into bite sized pieces and par-boil until nearly cooked.

Drain and dry thoroughly in a clean tea-towel or paper towels, then coat with Tigers Spice.

In an ovenproof dish or a large high-sided frying pan, heat olive oil on med-high heat, then add kumara pieces and shake well in the pan.

Shake pan every few minutes until kumara is browned, then drain briefly on kitchen towel and serve immediately.
Additional Tips
Other ideas for Tigers spice:
- cook a chicken breast coated in Tigers spice and serve with an avocado and tomato salad
- mix equal quantities of tigers spice with light soy sauce for tuna or salmon, then sear fish and serve with Asian greens
- sprinkle Tigers spice over a sheet of puff pastry and roll lightly with a rolling pin to imbed spice. Cut into strips, twist into spirals, and bake in a hot oven for 10 minutes or until puffed and golden.
