- 1 head of cauliflower, small florets cut off (keep trimmings to make cauliflower rice)
- 125ml (1/2 cup) Greek yoghurt
- 2 tsp Gunpowder Spice
- curry leaves, coriander, pomegranate and pine nuts, to serve (optional)
- Heat oven to 200C.
- Combine yoghurt and spice blend in a large bowl, then add cauliflower, coating thoroughly.
- Place on a lined baking tray and roast for 25-30 minutes until golden.
- Serve with desired garnishes and eat while hot.
