Chicken Satay Skewers
Description Satay skewers are a crowd-pleasing snack or finger-food for a party.  They can also be served with steamed rice and sliced cucumber as a meal.

3 tablespoons Herbie’s Spices Satay Spice Blend
½ tablespoon peanut oil
½ tablespoon Herbie’s Spices Gula Melaka or brown sugar         
6 tablespoons crunchy peanut butter                  
2 chicken breasts                                             
1 Lebanese cucumber, sliced thinly lengthways

Methods/steps
  1. Soak bamboo skewers in water for at least an hour or lightly oil metal skewers.
  2. Follow directions on pack to make satay sauce.  Set aside. 
  3. Cut chicken breasts in half lengthways, then into cubes and string onto skewers and coat with a little olive oil. 
  4. Cook chicken on the grill or barbecue and serve on a bed of cucumber strips and topped with satay sauce. 
Additional Tips

Other ideas for Satay seasoning:

- mix with seared cubes of lamb and use as pie filling
- top a beef burger with satay sauce, cucumber and onion
- make Gado Gado Indonesian salad, topped with satay sauce and a poached egg
