Chicken or Rabbit with Juniper Berries
Description Juniper berries and thyme give an authentic flavour to this French dish.

1 rabbit, jointed, or 500g chicken thighs  
4 tablespoons olive oil               
12 Herbie’s Spices Juniper Berries Hand Picked
8 rashers bacon
2 teaspoons Herbie’s Spices Thyme Leaves Rubbed 
2 cloves garlic, chopped
1 can chopped tomatoes        

Methods/steps
  1. Put rabbit or chicken into a dish with oil and berries and marinate 3-4 hours. 
  2. Heat oven to 180ºC. 
  3. Remove joints from marinade. 
  4. Lay the bacon rashers singly and place a piece of rabbit or chicken on each one, sprinkle with thyme, garlic and freshly-ground black pepper, and wrap bacon around. 
  5. Pour the tomatoes into an ovenproof dish, place the parcels in a single layer and pour the marinade over. 
  6. Roast in the oven for 45-60 minutes, basting once or twice.  Cooking time will depend on your oven.
Additional Tips
If using rabbit, buy farmed rabbit, not wild, as it's more tender.
