Caribbean Prawns

½ tablespoon vegetable oil
½ red capsicum, chopped
½ yellow capsicum, chopped
½ green capsicum, chopped
1 small onion, finely chopped
1 can chopped tomatoes
1 teaspoon Herbie’s Spices Jamaican jerk seasoning
16 large green prawns, shelled and cleaned
2 teaspoons fresh coriander, chopped
Methods/steps
  1. Heat oil in a heavy based pan.
  2. Add all the capsicums and the onion.
  3. Cook over medium heat, stirring occasionally, until soft.
  4. Add tomatoes, jerk seasoning, and salt to taste.
  5. Cook a further two minutes.
  6. Stir in prawns and simmer until cooked through.
  7. Remove from heat.
  8. Serve over fluffy rice, garnished with the fresh coriander.
Additional Tips
If you're lucky enough to have left-overs, heat them up for lunch the next day.
