Caribbean Prawns

½ tablespoon vegetable oil
½ red capsicum, chopped
½ yellow capsicum, chopped
½ green capsicum, chopped
1 small onion, finely chopped
1 can chopped tomatoes
1 teaspoon Herbie’s Spices Jamaican jerk seasoning
16 large green prawns, shelled and cleaned
2 teaspoons fresh coriander, chopped
½ red capsicum, chopped
½ yellow capsicum, chopped
½ green capsicum, chopped
1 small onion, finely chopped
1 can chopped tomatoes
1 teaspoon Herbie’s Spices Jamaican jerk seasoning
16 large green prawns, shelled and cleaned
2 teaspoons fresh coriander, chopped
Methods/steps
- Heat oil in a heavy based pan.
- Add all the capsicums and the onion.
- Cook over medium heat, stirring occasionally, until soft.
- Add tomatoes, jerk seasoning, and salt to taste.
- Cook a further two minutes.
- Stir in prawns and simmer until cooked through.
- Remove from heat.
- Serve over fluffy rice, garnished with the fresh coriander.
Additional Tips
If you're lucky enough to have left-overs, heat them up for lunch the next day.
