Cajun Blackened Chicken or Fish
Description This quick recipe makes a great mid-week meal.  Cajun cuisine is typically peppery, with chilli heat and herbaceous flavours.

Herbie’s Spices Cajun Spice Mix
2 fillets chicken breast or 2 fillets of a firm-fleshed fish such as ling
2 tablespoons butter

Methods/steps
  1. Sprinkle the Cajun Spice Mix over both sides of the fillets, patting on firmly so that they are well coated. 
  2. Heat the butter in a heavy-based pan – it needs to be hot, as the burning butter is part of the colouring and flavouring effect of Cajun. 
  3. Cook the meat over moderate heat until done and serve immediately.
Additional Tips
Alternatively, the meat can be cooked without butter on a grill or barbecue.  Although traditionally used for white meats such as chicken or fish, this spice mix makes a fabulous dry marinade for steak to be barbecued.
