Herbies Spices Recipes
500g chicken thigh filets, boned and trimmed
2 tablespoons Herbie's Spices Berbere
1 tablespoon cooking oil
1 onion finely chopped
1 clove garlic, crushed
1 tablespoon tomato paste
2 carrots halved lengthwise and cut into 2cm pieces & additional vegetables if desired
Roll the pieces of chicken in Berbere.
Heat oil in casserole dish, fry onions until clear and add garlic.
Add coated chicken, brown then add tomato paste, carrots (additional vegetables) and add enough water to cover.
Transfer to the oven at 150°C for half an hour or until the chicken and vegetables are cooked.
Serve with a sweet potato mash, rice, or any other carbohydrate to soak up the gravy. Berbere spice mix is also great with pan-fried mushrooms.
