BBQ Prawn Skewers
Description What symbolises an Australian summer better than prawns on the barbie?  With Herbie's Balmain and Rozelle spice mix (Australia's only suburb-specific spice!), you have a secret ingredient that will make your barbecued prawns the talk of the town.

12 jumbo prawns, uncooked
1½ tablespoons Herbie’s Spices Balmain and Rozelle spice mix
Methods/steps

Preparation:

  1. Soak twelve bamboo skewers for an hour.
  2. Peel the prawns, removing heads and shells but leaving tails intact.
  3. Place the peeled prawns in a shallow dish and sprinkle the spice mix over.
  4. Toss and turn the prawns until they are evenly coated.
  5. Push a skewer lengthwise through each prawn.
Cooking:
  1. Spray prawns with oil or brush barbecue well with oil.
  2. Cook on a hot grill, turning once or twice.

 

Additional Tips

Serve as a snack with drinks, as an entrée with torn rocket leaves, or as part of a barbecue meal.  Balmain and Rozelle Spice mix is a truly unique spice blend with lemony overtones and a hint of chilli, and it certainly gives a zing to all kinds of seafood.
