Basil Seed Drink
Description If you've lived or travelled in Asia, you will be familiar with this drink which is strange to the uninitiated. Basil seeds swell and become glutinous when wet, giving this drink a consistency something like watermelon. It's very filling, and has even become popular as a weight-loss aid.
At a glance
1 large cup
1 cup water
1 tablespoon sugar, or to taste
1 teaspoon honey
2 teaspoon basil seeds
Mix the water, sugar and honey together until sugar has dissolved. This is quicker if you use warm water. Add the basil seeds and let stand for two or three minutes until they have developed their jelly-like consistency. Serve immediately.
Although this drink is something of an acquired taste, it's certainly worth a try. You can add a little coconut milk if you wish.
