Basil Pesto

1 cup fresh basil leaves, picked from the stem, washed and drained

125g grated Parmesan cheese

125g pine nuts

4 cloves garlic, peeled

½ teaspoon Herbie’s Spices Sea Salt

olive oil

Methods/steps
  1. Place all the ingredients in the mortar with a little olive oil, and pound with the pestle until everything is nicely mushed together. 
  2. Add more oil as required until the mixture achieves the consistency of thick cream.
